The key to Kimchi

Kimchi is a corner stone of Korean food. I will probably offend people with misunderstanding Kimchi but from what I understand, it’s a dish made mostly from cabbage and chilis, and … some other stuff… The ingredients are mixed together and then fermented. It’s hot, sour, pungent. Reasonable people think it’s delicious.

Apparently, many make it at home even though it seems to be an involved process. If you keep your eyes open, you can see it being made in Seoul’s house entrances and courtyards.
